Chef Eric Chee Chew Soong proved his culinary mettle at an early age, when, at 28, he was named the Chef de Cuisine of Dubai’s Madinat Jumeirah-Al Qasr. Today, he holds the position of Executive Chef at the Shangri-La Hotel, Qingdao in China.

He culinary career and achievements span across Asia and Middle East. Starting his career in Malaysia he spend time in Singapore, Dubai, Hong Kong, Cambodia and China. Eric was part of the pre- reopening team of the famous Mandarin Oriental Hotel in Hong Kong in 2005 and took charge for the opening of the Café Causette, the all-day dining venue.

A born achiever, his various accomplishments include gold and silver medals from culinary completions in Dubai, Singapore and China. During his time the restaurants in Dubai and Hong Kong were voted among the top ten in the city.

Chef Eric wants to keep working and traveling in future to many more places to discover new methods of cooking using the best and latest products on the market. He also plans to open his own establishment in the next several years. Ultimately, his goal is to further build on his success in the hospitality industry and help train the next generation of Asian Chefs to achieve their culinary dreams.

In his spare time, Eric devotes his time to his family, his wife Irene and their two daughters.
